I love to make serve fun meals for my family on St. Patrick’s Day. Everything is usually green or shamrock shaped. So I was thrilled to discover spinach tortillas at the grocery store. Cut with a large cookie cutter, they are easily transformed into Shamrock Quesadillas.

Tip: If your kids don’t like or can’t have cheese, no problem. Just make them into Shamrock peanut butter and jelly sandwiches. Or use the same cookie cutter to cut lunch meat for a Shamrock Sandwich.

You will need a large shamrock cookie cutter for this recipe. Mine is 5 inches in size.

Craft a Happy Home Recipe Ingredients

Shamrock Quesadillas Ingredients:

  • Spinach Tortillas (mine were the large wrap size)
  • Cheese of choice, shredded (we used co-jack, but muenster is good too.)
  • Toppings of choice, optional (chicken, veggies, etc)
  • Butter
  • Craft a Happy Home tutorial

    Shamrock Quesadillas Recipe

    Preheat oven to 400 degrees. Grate your cheese if you bought bar cheese instead of a bag of shredded.

    Cut out the spinach tortilla with the shamrock cookie cutter

    Use the shamrock cookie cutter to cut out your tortillas. You will need 2 Shamrock shapes for each quesadillas.

    Use a pastry brush to brush one shamrock with melted butter. Place butter side down on a baking sheet.

    Shamrock quesadilla filling

    Sprinkle with shredded cheese and add toppings of choice. Top with a second shamrock and brush top with butter. Repeat for remaining shamrock shapes.

    Bake for 5 minutes or so, checking frequently. You want the shamrock quesadillas to just be starting to brown and get a little crispy. You can also fry them in a skillet if you like. I prefer baking them because they all cook at once.

    Tip: If you can’t find spinach tortillas at your local grocery store, they are available on Amazon. Or you can also make your own. I saw Trader Joe’s has a pesto cheese that would be good on this and would make it a completely green meal!
